Gosh, Mark, Taiwanese food really is something else...so many very unusual combinations of flavors and textures that can seem very odd at first. And then, somewhere between the first bite and the 8th, weird becomes an addiction that you can't quite explain! :-) Trouble is, I find the dishes are never quite the same when you try to reproduce them, either. It must be something to do with the atmosphere at the night market after a hot, humid day that makes it tastes just so. Did you know that the now almost-ubiquitous Bubble Tea was invented in Taiwan?

Hmmm... "food for thought" reminds me of visits to Taipei and incredible Taiwanese food, like nothing I'd eaten on the mainland. Your #9 venture might consider sharing those delicious secrets with the world?
